  • pH: 3.85%

Fermented in open topped fermenters.  Aged for 19 months in a once-used French Oak Puncheon (500 liters)

Aromatics: Dark berry and boysenberry, smoke, and tobacco or cigar box.

Palate: Beautiful dark fruit upfront, followed by smoke, tobacco, and tar.  Finishes with nicely integrated tannins.  If I were to taste this wine blind folded, I’d think it was from the Rocks District AVA near Walla Walla.  A Syrah for Syrah lovers. 

Color: Beautiful dark purple.

Food Pairings: Grilled leg of lamb, grilled rib eye steak, lamb shank in mole sauce.

When to drink: Wonderful now and should age beautifully for 5 to 7 years
