Harvested: El Mochuelo Estate Merlot – 10/12/21 (Brix – 27.5, pH - 3.76). Dubrul Cabernet Franc – 09/16/21 (Brix – 24.1; pH – 3.70). Tapteil Cabernet Sauvignon – 10/07/21 (Brix – 27.1, pH – 3.79), Weinbau Petit Verdot – 12/12/21 (Brix – 26.5, pH – 3.58)

Fermented in open topped fermenters. All wines were aged for 21 months. The El Mochuelo Estate Merlot was aged in a once-used French oak puncheon. Cabernet Franc was aged in 100% new French oak barrels. Cabernet Sauvignon was aged in 100% new American oak. Petit Verdot was aged in 100% new French Oak.
Aromatics: Smells of pretty blackberry, white pepper, and lightly toasted oak.
Palate: Nice acid and dark berry fruit upfront. The mid to back-palate imparts light smoke flavors and fine-grained tannins. The wine finishes impressively with long, slightly drying tannins, smoke, bright acid, and dark fruit. A complicated and beautiful wine.
Color: Pretty cherry-red
Food Pairings: Ribeye steak or dry-rubbed ribs.
When to drink: It’s ready to drink now, but it should improve with a few years aging. This wine should be beautiful for at least 10 years.
