Blend: 95% Cabernet Sauvignon (Clone 191), 3% Merlot, 2% Petit Verdot
Vineyards: Cabernet Sauvignon - Tapteil Vineyard, Red Mountain AVA; Merlot – El Mochuelo Estate Vineyard, Lake Chelan AVA; Petit Verdot – Weinbau Vineyard, Wahluke Slope AVA
Harvested: 10/07/2021. Brix – 27.7, pH – 3.8.
Bottled: 08/16/23
Alcohol: 14.5%
Fermented in open fermenters. Aged for 21 months in 95% new American Oak and 5% new French Oak.
Aromatics: Scents of brown sugar and caramel, tobacco, damson plum, and smoke
Palate: Bracing upfront acidity, followed by beautiful dark cherry and blackberry, smoke, tobacco, and molasses. Finishes with long furry, tongue coating tannins.
Color: Dark Garnet
Food Pairings: Venison with cherry sauce and/or wild boar sausage
When to drink: Can be drunken now, but we would recommend holding for a year or two before opening. This wine should age beautifully for 10+ years.
